Festive Food

Happy Christmas Readers,

Today we're looking at festive food I promise this isn’t a love letter to pigs in blankets. Below are some of my favourite festive recipes I thought I would share with you guys. First, we have Cheese Biscuits which are my Aunt’s favourite and almost every special occasion she asks me if I can make them. Secondly, we have Cinnamon cookies, please excuse the icing fail in the picture but they tasted good or everyone was too nice to say anything else. Finally, we have Cranberry Sausage Rolls Mother Gooses favourite.

Cheese Biscuits
120g Plain Flour
120g Margarine
120g Mature Cheddar Cheese
  1. Preheat the oven to 170C/fan 150C/gas 5.
  2. Mix all the ingredients together in a mixing bowl using your hands until a dough is formed.
  3. Roll out the dough to a thickness of 5mm. Then use a cutter to cut out the biscuits.
  4. Place the biscuits onto a floured baking tray and bake in the oven for 10-15 minutes or until golden and crispy.

Cinnamon cookies
150g self-rising flour
150g plain flour
2 teaspoons ground cinnamon
125g butter
100g sugar
1 egg beaten
  1. Set oven at 160 degrees C (Gas Mark 3).
  2. Sift flours and cinnamon into a large bowl.
  3. In a separate bowl, mix butter and sugar until smooth. Add egg and mix well.
  4. Stir in the dry ingredients and mix into firm dough. Lift on to a lightly floured board, knead until smooth. Roll to 5mm thickness. Cut into shapes and place on a greased oven tray.
  5. Bake in the preheated oven until light golden colour, 10 to 15 minutes. Let cool and harden.

Cranberry Sausage Rolls
Ready Rolled Puff Pastry
1 packet Sausages Meat
2 tbsp Cranberry Sauce
1 Egg beaten

  1. Pre-heat the oven to 220°C/Fan 200°C/Gas mark 7.
  2. Combine the sausage meat and the cranberry sauce using a fork until mixed
  3. Take half of the sausage meat and evenly spread it over one half and then repeat with the other piece.
  4. Fold the empty half of the pastry over and use a folk to seal the edge.
  5. Next brush each of the sausage rolls with the egg wash and then cut each of them into 6 mini sausage rolls.
  6. Finally bake the sausage rolls for 25-30 minutes until the pastry has puffed up and the sausage meat is cooked through.
